Ingredients
For the base
200 gr Digestive cookies
65 gr melted butter
For the filling
4 eggs size L (at room temperature)
200 gr sugar
350 ml fresh cream with 35% fat (cold)
600 Philadelphia cheese (at room temperature)
30 gr cake flour
Preparation method
Cover with baking paper a 23 cm springform cheesecake pan (bottom and edges).
Blend the cookies in the mixer until you have powder, stir in the butter and mix well.
Cover the bottom of the pan with cookies and press the mixture with a glass, put in the fridge for at least 20 minutes.
In a large bowl beat the Philadelphia cheese with sugar until is fluffy.
Then add the eggs one by one.
Add the flour and the fresh cream and mix well until you have a silky mixture.
Preheat the oven at 200 degrees Celsius.
Bake for 30-35 minutes.
Let it cool completely and then put in the fridge for 6 hours or until is cool completely.
