Blueberry Lemon Vegan Cake


 



Lately, more and more people are choosing to be vegan! Most of them see it as a good practice to protect animal rights or because they have rare consumption conditions. One way or another the philosophy behind veganism is one, to give up any consumption of animal products.

I have been working in restaurants which are serving only vegan plates and I have to say that the vegan sector is everyday growing bigger and bigger. Today you can come across with plant-based products that smell and taste like meat, for example, burgers, sausages, salamis, cheeses and more.

So for people that they want to try being vegan is really much easier, because they can replace their daily based products with vegan ones. In Spain, there are many vegan restaurants but also there are many restaurants that they can offer vegan plates now.

In my opinion, we should all try at least reduce the consumption of meat at least once per week, especially now that all livestock animals are in pain with terrible living conditions, are breed in large amounts and antibiotics are given to them. When we consume meat like that we are also consuming antibiotics and this leads to a bigger problem of becoming immune to antibiotics.

If you never had a vegan cake in your life here is your chance, and it doesn't have to be with blueberry and lemon! you can add any ou ingredients you like. You can add cocoa, coconut, orange or even strawberries.


Ingredients


  • 190 gr. water

  • 70 gr. canola oil

  • zest of a lemon

  • 1 tsp. of vanilla extract

  • 180 gr. cristal sugar

  • juice of a lemon

  • 230 gr. self-rising flour

  • 1 tsp. baking soda

  • 200 gr. blueberries

  • pinch of salt

For the glaze:

  • Half cup of powder sugar

  • 4-5 tbsp lemon juice


Preparation Method


  1. In a bowl, you put the water, canola oil, lemon zest, vanilla, lemon juice and the sugar and you mix well until the sugar dissolves.

  2. In another bowl, you put the flour, baking soda and the pinch of salt and stir.

  3. You incorporate the dry ingredients with the liquids slowly, until you have a mass but without overmixing.

  4. Last you incorporate the blueberries.

  5. Oil and flour a baking tin of 25x11cm and pour your mixture.

  6. Bake on a preheated oven at 180 degrees Celsius for 40 minutes.

  7. Let it cool completely and then unmold.

  8. Mix the powder sugar with the lemon juice one tablespoon at a time until you have a runny mixture, pour all over the cake and wait until is set.
